Oatmeal Vegetable Kebabs

Makes 12 to 14 patties

Cooking time 15 minutes  

Ingredients 

  • Instant Quaker oats 1 cup

  • Frozen vegetable mix 1 cup

  • Egg 1 (for binding)

  • Cilantro roughly chopped ¼ cup

  • Onion medium small diced ½ cup

  • Jalapeno finely chopped 1 tbsp (optional)

  • Lemon juice 1 to 3 tbsp

  • Salt and Pepper to taste

  • Arugula or Baby Spinach

  • Olive oil ½ tbsp

  • Hot Water ¼ cup (for soaking the oatmeal)

Method

  1. In a food processor roughly chop the frozen vegetables.

  2. Soak the oatmeal in hot water for about 5 minutes.

  3. In a bowl, mix the oatmeal, vegetables, cilantro, onion, egg, lemon juice, jalapeño (optional),salt and pepper

  4. Make small patties, about 2” , and cook them on a skillet with very little oil, on medium heat for about 3 to 4 minutes on each side, until golden brown.The patties are delicate, so for the ease of flipping them, do not overcrowd the skillet. Cook 3 to 4 patties at a time.

  5. In another bowl, toss the salad leaves with some olive oil, salt and lemon juice and serve the patties on a bed of salad leaves

  6. Enjoy your patties with salsa or ketchup!
