Oatmeal Vegetable Kebabs
Makes 12 to 14 patties

Ingredients
Instant Quaker oats 1 cup
Frozen vegetable mix 1 cup
Egg 1 (for binding)
Cilantro roughly chopped ¼ cup
Onion medium small diced ½ cup
Jalapeno finely chopped 1 tbsp (optional)
Lemon juice 1 to 3 tbsp
Salt and Pepper to taste
Arugula or Baby Spinach
Olive oil ½ tbsp
Hot Water ¼ cup (for soaking the oatmeal)
Method
In a food processor roughly chop the frozen vegetables.
Soak the oatmeal in hot water for about 5 minutes.
In a bowl, mix the oatmeal, vegetables, cilantro, onion, egg, lemon juice, jalapeño (optional),salt and pepper
Make small patties, about 2” , and cook them on a skillet with very little oil, on medium heat for about 3 to 4 minutes on each side, until golden brown.The patties are delicate, so for the ease of flipping them, do not overcrowd the skillet. Cook 3 to 4 patties at a time.
In another bowl, toss the salad leaves with some olive oil, salt and lemon juice and serve the patties on a bed of salad leaves
Enjoy your patties with salsa or ketchup!
