Oatmeal Vegetable Kebabs
Makes 12 to 14 patties

Ingredients
- Instant Quaker oats 1 cup 
- Frozen vegetable mix 1 cup 
- Egg 1 (for binding) 
- Cilantro roughly chopped ¼ cup 
- Onion medium small diced ½ cup 
- Jalapeno finely chopped 1 tbsp (optional) 
- Lemon juice 1 to 3 tbsp 
- Salt and Pepper to taste 
- Arugula or Baby Spinach 
- Olive oil ½ tbsp 
- Hot Water ¼ cup (for soaking the oatmeal) 
Method
- In a food processor roughly chop the frozen vegetables. 
- Soak the oatmeal in hot water for about 5 minutes. 
- In a bowl, mix the oatmeal, vegetables, cilantro, onion, egg, lemon juice, jalapeño (optional),salt and pepper 
- Make small patties, about 2” , and cook them on a skillet with very little oil, on medium heat for about 3 to 4 minutes on each side, until golden brown.The patties are delicate, so for the ease of flipping them, do not overcrowd the skillet. Cook 3 to 4 patties at a time. 
- In another bowl, toss the salad leaves with some olive oil, salt and lemon juice and serve the patties on a bed of salad leaves
