Apple Bread with Maple Cinnamon Glaze

Preparation Time 20 minutes

Bake Time 45 to 50 minutes 

Makes 4 small sized loafs 

Ingredients 

  • Apple 3 medium or 2 cups peeled and diced 

  • Eggs 2 

  • Vegetable Oil ½ cup 

  • All Purpose Flour 2 cups 

  • Baking Powder 1 tsp 

  • White Sugar 1/2 cup 

  • Brown Sugar 1 cup 

  • Vanilla Essence 1 tbsp + ½ tsp 

  • Cinnamon Powder 1 tsp 

  • Ginger Powder 1tsp (optional)


For the Glaze 

  • Cinnamon ½ tsp 

  • Icing sugar 2 to 4 tbsp 

  • Maple syrup about 2 to 3 tbsp 

Method

  1. Preheat the oven to 350F and grease the loaf pans. (I have four small sized loaf pans which are perfect to make loaves for gifting)

  2. In a bowl, whisk the eggs, oil and sugar. Add the diced apples to the mixture

  3. In a separate bowl, sift the flour, baking powder, cinnamon powder and ginger powder

  4. Gradually add the flour mixture to the apple mixture and and mix until the ingredients are evenly combined

  5. Evenly divide the mixture into the loaf pans. Bake the loaves for about 35 to 40 minutes, until a toothpick inserted in the center of the loaf comes out clean. Let it cool in the pan for about fifteen minutes and then invert them onto a wire rack and let them cool completely

  6. Drizzle the loaves with some cinnamon and maple glaze before cutting them into slices. (For the glaze- mix the ingredients in a bowl. It should be slightly runny in consistency to easily drizzle over the loaves)

Note: You could cut slices of the loaf and toast them in the oven for a more crisp texture and slather some butter before devouring it!
