Toasted Coconut and Dark Chocolate Truffles

Preparation time 30 minutes 

Makes about 12 to 15 truffles

Ingredients

  • Frozen shredded coconut 1 cup 

  • Brown Sugar ½ cup 

  • Vanilla essence 1 tsp

  • Corn Syrup 2 tbsp

  • Unsweetened Cooking Dark Chocolate 1 cup 

  • Sweetened dried Coconut flakes ½ cup or more 

Method

  1. In a medium skillet toast the frozen coconut with sugar. Continue mixing until the coconut thaws out and sugar starts to melt

  2. In about 7 to 8 minutes the coconut will start to caramelize. Add the corn syrup and vanilla essence and continue mixing until the coconut sugar mixture starts to roll into balls

  3. Remove from heat. Let it cool for about 5 to 7 minutes. Roll into small balls. Keep aside

  4. In a mixer, powder the sweetened coconut flakes which will be used to garnish the truffles

  5. Melt chocolate in the microwave for about 2 to 3 minutes

  6. Dip the balls in melted chocolate ensuring an even coat. Now roll the chocolate dipped balls in powdered coconut

  7. Keep the truffles on a tray and let them dry

  8. Makes for a perfect in home treat as well as can be boxed for holiday gifting!

Notes:

  1. You can also use crushed nuts like almonds, pecans or walnuts to cover the chocolate.
