Crunchy Quinoa and Black Bean Patties

Serves 5 to 6

Ingredients

  • Quinoa 1/2 cup

  • Black Bean Can 1/2 can, drained and rinsed

  • Sweet Potato 1 medium sized, boiled and peeled

  • Sweet Corn Kernels (frozen or fresh) 1/2 cup

  • Chopped Cilantro 1/3 cup

  • Jalapeno 1, deseeded and finely diced

  • Fresh Lemon Juice 2 tbsp

  • Cumin Powder 1 tsp

  • Coriander Powder 1 tsp

  • Smoked Paprika 1 tbsp

  • Garlic Powder 1 tsp

  • Onion Powder 1 tbsp

  • Dry Oregano 1/2 tsp

  • Panko Bread crumbs, as needed about 1 cup or more

  • Oil for cooking 1 to 2 tbsp

  • Salt as needed

Method

  1. Bring the quinoa and about 1-1/2 cups of water to a boil in a saucepan. Reduce heat to low, cover and simmer until the quinoa is tender and sprouted, about 10 to 15 minutes. Strain the quinoa to drain off excess water.

  2. In a medium sized bowl, mash the sweet potato and black beans into a paste like mixture.

  3. Mix the quinoa, corn kernels, jalapeno, cilantro, lemon juice, 1/3 cup panko crumbs along with all the spices. Taste and adjust the salt and chili as needed.

  4. Form small patties, about 2” to 3” in size.

  5. On a medium sized plate, put the remaining panko crumbs; gently roll the patty over the crumbs to lightly coat them on all sides.

  6. Heat some oil in a skillet, cook the patties over medium to low heat, about 3 to 4 minutes on each side, until golden brown.

  7. Serve the patties with some homemade guacamole or ketchup.

Note

  1. You can use these patties for burger; just make them slightly bigger in size! Serve the quinoa and bean burger patty with guacamole and shredded cheddar cheese. You can also caramelize some onions and serve burgers with caramelized onions and cheddar cheese.

  2. You can also use Taco seasoning mix instead of the spices mentioned above.
