Beef Sliders (Mexican Style)

Ingredients
For the Beef Patties
- Minced Beef (I usually use 85% lean and 15% fat) 1/2 lb. 
- Dried Onion Flakes 1 tbsp 
- Garlic Powder 1/2 tsp 
- Cumin Powder 1 tbsp 
- Grated Cheese (any that is available, ideally grated cheddar) 1/4 cup 
- Salt 1/2 tsp (I usually lightly season the patty with salt, as the other ingredients also add to the salt eventually) 
- Cracked Black Pepper 1/2 tsp 
- Oil (as needed to cook the patties) 
For the Black Beans Chili (my improvised version for this recipe)
- Canned Black Beans 1 cup 
- Minced Dried Soy 1/2 cup 
- Coriander Powder 1/4 tsp 
- Cumin Powder 1/2 tsp 
- Tomato Paste 2 tbsp 
- Brown Sugar 1 tbsp 
- Salt to taste 
- Apple Cider Vinegar 1/2 tsp 
- Oil 1 tbsp 
For the Guacamole
- Ripe Avocados 2 medium sized 
- Tomato (any, I prefer tomatoes on the vine as they are very red and give a nice color to the guacamole) pulp removed and small diced, 1/4 cup 
- Onion, medium sized, small diced, 1/4 cup 
- Jalapeno, deseeded and small diced, 1 tbsp 
- Lime or Lemon Juice, about 2 tbsp or as needed 
- Cilantro, finely chopped, 2 tbsp 
- Garlic Powder 1/4 tsp 
- Salt to taste 
Garnish for the Slider
- Green part of Scallions, finely chopped, 1/4 cup 
- Crunchy Fried Onions, 1/2 cup (store bought is easy and good) 
- Sauce (1 tbsp Mayonnaise, 2 tbsp ketchup, Dried Celery Leaves crushed - a sprinkle, Salt to taste) 
Method
Making Beef Patties
- In a bowl, mix all the ingredients for the patties. The mixture makes about 6, 2” patties. 
- For cooking the patties, you could either grill the patties, by cooking 2 to 3 minutes on each side or you could cook them on a cast iron skillet with some oil, 2 to 3 minutes on each side. 
Making the Chili
- In a skillet, heat the oil and add the black beans along with the minced soy. Mix it well and cook for about 2 minutes. 
- Add the remaining ingredients and mix well. 
- Add about 1/4 cup of water and cook until the mixture is thick and pasty but still moist. Adjust the consistency with more water if required. 
- Taste to adjust seasoning. 
Making the Guacamole
- Slice the avocados in half, remove the pit and skin and place in a medium sized mixing bowl. 
- Mash the avocado with a fork and make it into smooth paste. 
- Add the remaining ingredients and mix well. 
Assembling the Sliders
For the Sloppy Joe Sliders - on the bottom bun, place the beef patty and top it with some chili. Drizzle some sauce and top it with crunchy fried onions and scallion greens.
For the Guac Sliders - on the bottom bun, place the patty and top it with some guacamole and place the top of the bun.
Note: I used brioche slider buns because that’s what I had in my pantry. You could use any kind, based on your preference. You could lightly toast your buns and butter them if you prefer. I just like them as is, if they are fresh!
