Preparation Time 20 minutes
Cook Time 20 minutes
Makes about 36 balls
You need Ebelskiver Pan to make these fritters
Ingredients
Left over bread edges, crumbled 1 1/2 cup
Eggs 2
Apple (any) small diced 1/2 cup
Brown Sugar 1 tbsp
Salt a pinch
Baking Powder 1 tsp
Cinnamon Powder 1/2 tsp
Vegetable Oil 2 tbsp or Cooking Spray
Powdered Sugar for sprinkling or Maple Syrup drizzle
Method
In a bowl, whisk together the crumbled bread edges and eggs.
Add sugar, salt and baking powder and continue whisking until everything is mixed well into a smooth batter.
Fold in the diced apples along with cinnamon powder.
Spray the ebelskiver pan with cooking oil and heat it over moderate heat. Once the pan is heated, reduce the heat.
Add about 1/2 to 1 tablespoon of batter into each well of the pan (depending on the size of the well). Let the fritters cook until bottoms are golden, about 3 to 4 minutes, then flip and continue to cook until tops are also golden, 3 to 4 minutes. Repeat with rest of batter, then serve immediately with powdered sugar on top or drizzled maple syrup.
Note: Yes these are non-fried fritters! but they taste almost as good as fried ones!!
