Snow Peas/ Green Beans and Baby Lettuce Salad

Preparation Time 25 minutes

Cook Time 20 minutes

Serves about 4 to 5

Ingredients

  • Baby lettuce heads 3

  • Snow peas 1 cup

  • Green Beans diced 1 cup

  • Cranberries 2 tbsp

  • Flax seeds 2 tsp

For the dressing

  • Extra virgin olive oil or flavored olive oil like Meyer lemon or Basil

  • If using EVOO- 2 tbsp, add 1 tsp of lemon rind

  • Balsamic vinegar – 2 tbsp

  • Salt

  • Pepper

Method

  1. Roughly tear the lettuce leaves and wash them well to remove all the dirt. In a salad spinner, dry the leaves so that all the water has practically dried 

  2. Boil about a quart of water and add salt about 2 tbsp. Toss the snow peas and green beans in the boiling water for about 2 minutes. Remove them and shock them instantly in ice cold water to stop carry over cooking. Drain the water. Roughly chop the snow peas

  3. Toss them with the lettuce. Add the cranberries and flax seeds

  4. Whisk in the dressing to form an emulsion and add it to the salad just before serving
