Sweet Potato and Lettuce

Serves about 4 to 5
Ingredients
Sweet Potato – 3 to 4 medium sized
Lettuce – 1 head
For the Dressing
Dijon Mustard 1 tbsp
Lemon Juice – 2 – 3 tbsp
Olive Oil – 5 tbsp
Salt and Pepper to taste
Method
In a bowl, whisk the ingredients for the dressing. Adjust the seasoning with salt and pepper.
Dice the sweet potatoes. In a cast iron skillet, over medium heat, heat 2 tbsp of olive oil and caramelize the diced sweet potatoes. Sprinkle some salt and cook until the potatoes are soft and golden brown.
In the meanwhile, coarsely chop the lettuce.
In a large bowl, toss the lettuce and sweet potatoes with the dressing. Adjust seasoning if required.
