Roasted Brussel Sprouts

Preparation Time 20 minutes

Cook Time 30 to 45 minutes

Serves about 3 to 4

Ingredients

  • Brussel Sprouts 1lb

  • Olive Oil 3 tsp

  • Balsamic Vinegar 3 tsp

  • Pumpkin seeds 3 tbsp

  • Salt and pepper to taste

Method

  1. Preheat oven to 400 F

  2. Trim and cut Brussel sprouts in quarters and place them on a greased sheet pan.

  3. Drizzle about 2 to 3 tsp of olive oil. Sprinkle salt and pepper and toss them so they are coated with oil and seasoning.

  4. Roast in the preheated oven for about 30 to 45 minutes, shaking pan every 5 to 7 minutes for even browning.

  5. Broil the cooked brussel sprouts at about 450 F, for another 5 minutes until some of them begin to char.

  6. Take them out and drizzle some balsamic vinegar and sprinkle some pumpkin seeds. Adjust seasoning and serve.
