Shakshuka (with a twist)

Preparation Time 20 minutes

Cook Time 30 to 40 minutes

Serves about 2 to 4

Ingredients

Olive oil 3 tbsp

White onions 2 medium chopped

Red or Yellow Bell Pepper 1 medium chopped

Garlic cloves 5 – 6

Tomato paste ¼ cup

Canned diced tomatoes 28-ounce can

Basil roughly chopped ½ cup

Sugar 1 tsp

Paprika 1 tsp

4 eggs

Salt and Pepper to taste


Method

In a cast iron skillet, heat oil over medium heat. Caramelize the onions and minced garlic for about five minutes

Add the peppers and cook for 2 to 3 minutes until softened. Stir in the tomato paste and saute for another 3 minutes

Add the diced tomatoes from the can, basil, sugar and paprika. Adjust seasoning with salt and pepper

Crack the eggs into the tomato mixture. Cover and simmer for about 10 to 12 minutes or until the whites are cooked

Serve with thinly sliced toasted baguette or garlic bread
