Blueberry Lemon Muffin

Makes 6 medium sized muffins

Cooking time 45 minutes 

Ingredients

  • 2 cups fresh blueberries 

  • 1 ½ cups AP flour 

  • ¾ cup white sugar 

  • ½ tsp Salt 

  • 1/3 cup vegetable oil 

  • 1 egg 

  • 1/3 cup milk 

  • ½ tsp Vanilla essence 

  • 2 tsp Baking powder 

  • 2 tbsp Lemon zest

Method 

  1. Pre heat oven to 400F

  2. In a medium sized bowl, add all the ingredients and whisk until mixed well

  3. Grease the muffin tin or place muffin liner in each cup

  4. Pour the batter into each cup and fill it to the top

  5. Bake for 20 to 25 minutes until it rises and the top is light golden brown
