Chicken Meatballs with Burrata

Serves 4 to 5
Ingredients
Boneless Chicken Thighs 1/2 lb
Red Bell Pepper 1/2 cup, small diced
Dried Onion Flakes 2 tbsp
Garlic Powder 1 tsp
Fresh Thyme or Dried Thyme 1/2 tsp
Breadcrumbs 2 to 3 tbsp
Fresh Parsley, finely chopped, 2 tbsp + 2 tbsp (for garnish)
Salt and Black Pepper to taste
Marinara Sauce 3 to 4 cups
Burrata
Olive Oil 1 to 2 tbsp
Method
With a sharp knife, finely chop the thighs, or mince the thighs in a food processor.
In a medium sized bowl, mix the chopped chicken, bell peppers, breadcrumbs, and the herbs including onion flakes and garlic powder. Add some salt and black pepper.
I used ebelskiver pan to cook the meatballs, to cook them in less oil. Heat the pan over medium heat, add a drop of oil in each hole and reduce heat. Make small chicken balls and place them in each well. Let them cook until bottom is caramelized and golden brown, about 4 to 5 minutes, then flip and continue to cook until tops are also golden, 3 to 4 minutes. Repeat with the rest of the mix.
Transfer the balls to a skillet with high sides or a Dutch oven. Add the sauce and stir to combine. Adjust the consistency of the sauce by adding some water. Bring it to a simmer over medium heat.
Take it off the heat. Garnish the meatballs with burrata and parley. Have the meatballs with pasta or enjoy it as an appetizer.
Notes
To make the meatballs in the oven, preheat the oven to 350 F. Grease a sheet pan with some oil and place the balls on the pan. Bake for about 15 to 20 minutes or until golden brown and cooked through.
You can cook the meatballs on a stovetop. Heat some oil in a medium sized skillet over medium to low heat. Add few meatballs at a time, making sure not to crowd the pan. Cook, turning every minute or so, until browned on all sides, 10 to 12 minutes.
