Garlicky Broccoli Rabe

Serves 4

Ingredients

  • Broccoli Rabe 1 bunch

  • Garlic Cloves minced 6 to 8

  • Olive Oil 2 tbsp

  • Salt

Method

  1. Bring a large pot of water to a boil. Add about 2 tbsp of salt to this water.

  2. Working in couple batches, cook broccoli rabe just until bright green, about half a minute or so.

  3. Drain and let cool slightly. Squeeze excess liquid from broccoli rabe and coarsely chop.

  4. In a cast iron skillet, heat about 2 tbsp of oil and add the minced garlic. Stir the garlic continuously, until garlic begins to brown around the edges, about 3 to 4 minutes.

  5. Add the broccoli rabe and squeeze juice of half a lemon. Toss the broccoli rabe occasionally, until tender, but still has a bite, about 7 to 8 minutes. Season with salt and red pepper flakes.

  6. Enjoy as a side dish with grilled chicken or steak.

Notes:

  • This is a perfect side dish and pairs well even with pasta or pizza.

  • The boiling reduces the bitterness of the broccoli rabe.

  • You can use broccoli, cauliflower, chinese broccoli instead of broccoli rabe.
