Garlicky Broccoli Rabe

Ingredients
Broccoli Rabe 1 bunch
Garlic Cloves minced 6 to 8
Olive Oil 2 tbsp
Salt
Method
Bring a large pot of water to a boil. Add about 2 tbsp of salt to this water.
Working in couple batches, cook broccoli rabe just until bright green, about half a minute or so.
Drain and let cool slightly. Squeeze excess liquid from broccoli rabe and coarsely chop.
In a cast iron skillet, heat about 2 tbsp of oil and add the minced garlic. Stir the garlic continuously, until garlic begins to brown around the edges, about 3 to 4 minutes.
Add the broccoli rabe and squeeze juice of half a lemon. Toss the broccoli rabe occasionally, until tender, but still has a bite, about 7 to 8 minutes. Season with salt and red pepper flakes.
Enjoy as a side dish with grilled chicken or steak.
Notes:
This is a perfect side dish and pairs well even with pasta or pizza.
The boiling reduces the bitterness of the broccoli rabe.
You can use broccoli, cauliflower, chinese broccoli instead of broccoli rabe.
