Yellow Lentil with Cabbage Rice

Serves 5 to 6

Ingredients

  • Red Lentil 1 cup soaked and washed

  • Medium Onion 1 chopped

  • Medium Tomato 1 chopped

  • Garlic Cloves 8 to 10 finely chopped

  • Cumin Seeds 1 tbsp

  • Coriander Powder 1 tbsp

  • Red Chili Powder 1/2 tsp

  • Turmeric Powder 1/2 tsp

  • Clarified Butter or Ghee 1 tbsp

  • Salt to taste

Method

  1. In a pressure cooker, heat some clarified butter and crackle the cumin seeds until golden brown. Toss in the minced garlic and cook until the edges start to turn golden. At this time, add the chopped onions with some salt.

  2. Sweat the onions until they turn golden brown. Add the chopped tomatoes, turmeric, red chili powder and coriander powder. Continue to cook, until all the water from the tomatoes has evaporated and the tomato looks nicely caramelized, about 5 to 7 minutes.

  3. Add the washed red lentil with 2 cups of water. Cover the cooker with the lid and cook over medium heat until it whistles twice, about fifteen minutes or so.

  4. Turn off the stove and let it sit for about ten minutes. Carefully open the lid of the pressure cooker, by putting it under cold running water, to remove excess steam.

  5. I like my lentil to be thick, so I cook them further without the lid, until the lentils look thick and creamy. However, add water and accordingly adjust seasoning, if you prefer slightly soupy consistency.

  6. Adjust seasoning and garnish with some chopped cilantro.

Cabbage Rice

Preparation Time 10 minutes

Cook Time 30 Minutes

Serves 3 to 4

Ingredients

  • Basmati Rice 2 cups, soaked for about 2 hours prior to cooking

  • Cabbage 2 cups, thinly sliced

  • Black Mustard Seeds 1 tbsp

  • Clarified Butter or Ghee 1 tbsp

  • Salt to taste

Method

  1. In a pot, cook the rice with about 3 cups of water, about 20 minutes.

  2. Once the rice is cooked, drain excess water and wash the rice under cold running water to remove excess starch from rice. Drain the rice.

  3. In a skillet, heat clarified butter and add the mustard seeds.

  4. Add the cabbage and sprinkle some salt. Sweat the cabbage for about 2 to 3 minutes.

  5. Add the rice and toss it with the cabbage.

  6. Adjust the salt.

  7. Serve cabbage rice with cooked yellow lentils.
