Watermelon, Cucumber and Cilantro Salad

Serves 5 to 6 persons
Ingredients
For Salad
Watermelon medium sized (½ ) medium diced
Cucumber large diced 2 cups
Queso Fresco crumbled 1 and ½ cup
Cilantro finely chopped 1/3 cup
Extra Virgin Olive Oil 2 tbsp
Balsamic Vinegar 2 tbsp
Salt to taste (optional)
Method
In a large bowl, mix together all the ingredients and refrigerate for 30 minutes before serving
Note
Cut the watermelon in half and scooped out small balls, with a melon baller. Carefully remove extra red flesh from the sides. Garnish the edges in a zig-zag fashion as shown in the picture. Use this as a bowl for your salad.
Use the scraped out extra red flesh from the sides of your melon bowl and use it to make either watermelon margarita or just fresh juice with some mint and ginger!
