Watermelon, Cucumber and Cilantro Salad

Preparation Time 20 minutes 

Serves 5 to 6 persons

Ingredients 

For Salad

  • Watermelon medium sized (½ ) medium diced 

  • Cucumber large diced 2 cups 

  • Queso Fresco crumbled 1 and ½ cup 

  • Cilantro finely chopped 1/3 cup 

  • Extra Virgin Olive Oil 2 tbsp 

  • Balsamic Vinegar 2 tbsp 

  • Salt to taste (optional)

Method 

In a large bowl, mix together all the ingredients and refrigerate for 30 minutes before serving

Note

  • Cut the watermelon in half and scooped out small balls, with a melon baller. Carefully remove extra red flesh from the sides. Garnish the edges in a zig-zag fashion as shown in the picture. Use this as a bowl for your salad.

  • Use the scraped out extra red flesh from the sides of your melon bowl and use it to make either watermelon margarita or just fresh juice with some mint and ginger!
