Roasted Red Pepper Hummus

Preparation Time 15 minutes

Cook Time 45 minutes 

Serves 8 to 10 persons 

Ingredients 

  • Chick Peas (pre-soaked overnight) 2 cups 

  • Red Pepper medium sized 1 

  • Garlic clove 1 

  • Tahini Paste 2 tbsp 

  • Olive oil 1/3 cup 

  • Salt to taste 

Method 

  1. In a pressure cooker, add about 3 to 4 cups pf water with the pre-soaked chick peas, garlic and some salt. Cook for about 30 minutes or until three whistles. Wait about fifteen minutes before opening the pressure cooker. The chick pea should be soft to touch

  2. Roast the red pepper on a grill or over gas stove until charred on all sides. Keep aside for ten minutes and then remove the skin 

  3. In a blender, add the boiled chick peas, pepper, tahini paste and olive oil. Blend until smooth and creamy. Add 1 or 2 tbsp of water to adjust consistency. Adjust seasoning and transfer to a bowl

  4. Garnish the hummus with some red paprika and extra virgin olive oil. Serve with celery and carrot sticks
