Lemon Salmon and Red Radish Salad

Preparation Time 20 minutes 

Cooking time 10 minutes 

Serves 2 to 3 persons 

Ingredients 

  • Mixed Greens (lettuce, frisee, spinach, kale, arugula or endive) 

  • Red Radish 4 to 5 thinly sliced 

  • Red onion sliced ¼ cup 

  • Apple cider vinegar or Malt vinegar 2 to 3 tbsp 

For the fish

  • Salmon filet 1 lb

  • Lemon Juice 1 tbsp 

  • Dill fonds (optional)

  • Lemon rind 1 tbsp 

  • Olive oil 2 tbsp 

  • Salt 

  • Vinaigrette 

  • Balsamic Vinegar 2 tbsp 

  • Extra Virgin Olive Oil 2 tbsp 

  • Honey 1 tsp 

  • Salt to taste 

  • Black Pepper to taste 

  • Mustard 1 tbsp 

  • Lemon juice 1 tsp 

Method

  1. Marinate the fish for about fifteen minutes, while you are prepping for the rest of the salad. For the marinade, whisk together, lemon juice, dill fonds, lemon rind and olive oil. Pour over the fish and let it sit

  2. Meanwhile, tear the leaves, wash and dry them. If you have a salad spinner, even better! as it makes the job so much more easy

  3. Thinly slice the onions and soak them in some vinegar with salt

  4. Thinly slice the red radish and keep aside

  5. Heat an iron skillet, pan fry the filet of salmon about five to seven minutes each side. Cover the fish, as it splatters!

  6. In a bowl, whisk together ingredients for the vinaigrette

  7. Toss the greens with part of the vinaigrette. For serving, put the greens, some onion and radish slices and chopped salmon on top. Pour some extra dressing if you like. You could add some chopped nuts for extra crunch
