Homemade Wholewheat Smoked Salmon Pizza

Ingredients

Pizza Dough

  • Wholewheat Flour 1 cup + more for kneading 

  • All-purpose Flour ¼ cup 

  • Luke warm water ¾ cup (110F)

  • Active Dry Yeast ¼ oz or 2 ¼ tbsp 

  • Olive Oil 1 tbsp 

  • Sugar 1 tsp

  • Salt ¼ tsp 

Topping

  • Smoked Salmon 1 packet 

  • Red Onion thinly sliced 1/3 cup 

  • Red Radish thinly sliced 5 to 6 (optional)

  • Capers 2 tbsp 

  • White Vinegar 2 tbsp 

  • Sugar 1 tbsp 

  • Salt to taste 

  • Grated Lemon Rind (optional)

Sauce

  • Mayonnaise 6 tbsp 

  • Extra Virgin Olive Oil 1 tbsp 

  • Dried Dill 1 tbsp 

  • Lemon juice 2 tbsp 

  • Sugar 1 tbsp + more if required

Method 

For Pizza Dough 

  1. In a large bowl, whisk together, water, sugar and yeast. Let sit for 3 to 5 minutes until it begins foaming. (Discard the liquid, if it does not foam or smell yeasty and start all over again)

  2. Add olive oil and salt to the foamy mixture. Whisk in the wholewheat flour and all-purpose flour until the dough comes together to form a soft ball. Take the dough out onto a floured surface and knead until all the extra flour is absorbed and the ball is smooth, about 7 to 8 minutes. (Add more flour if the dough is sticky). Place dough into an oiled bowl and cover with a wet towel and store in a warm place to let it rise.

  3. When the dough is doubled in size, approximately 45 minutes, divide it into two, to make 2 approximately 8″to 9″ thin crust pizza.

  4. Preheat the oven to 400F. Roll a ball of the dough with a rolling pin until it is approximately 8″ to 9″ in diameter. Place the dough on an oiled pizza pan and bake until it becomes slightly brown about 7 to 8 minutes. Flip the pizza crust and bake the other side for approximately 5 to 6 minutes until lightly browned and crusty. 

For Sauce

In a small bowl, whisk together mayonnaise, olive oil, dill and lemon juice. Adjust the sweetness and saltiness with sugar and salt. The sauce should be sweet and tangy.

Pickling the Onions 

In a small bowl, pickle the onions with vinegar, salt and sugar for about twenty minutes. This helps in cutting down the sharpness of the onions.

Assembling the pizza 

Spread some of the sauce on the crust. Top it with salmon, onion, radish and capers.  Dust some lemon rind on the pizza.
