Citrusy Papaya Relish

Cook Time 20 to 30 minutes

Makes about 2 cups

Ingredients

  • Green Papaya, small diced 2 cups

  • Granulated Sugar 3/4 cup

  • Lemon Juice 1/4 cup

  • Lemon Rind 1 tbsp

  • Mint Leaves, chopped 2 tbsp

  • Water 1/2 cup

Method

  1. In a medium sized pot, cook the papaya with sugar and water, over low heat, stirring occasionally until sugar is dissolved, about 10 minutes.

  2. Add the lemon juice and rind, and continue to cook, until papaya becomes almost transparent and water has almost dried. Add the crushed mint leaves. Turn off the heat and let it cool.

  3. Transfer the relish to a sterile glass jar with a lid. Once cooled, store the relish in the refrigerator. Can easily be stored for up to 10 to 15 days or more.
